With all of the user generated content that we have for our beloved DOOM...there is still something to be said for the original IWADs. They have this nostalgic charm about them. Surely they have been bested in regard to aesthetic, difficulty, functionality...really every single aspect about the original IWADs has been bested over the years...except for the fact that the original doom.wad and doom2.wad are the originals. These are the firsts. Nothing can ever take that away.
That being said...despite how well they have aged...playing them without addons, for me anyway, can become stale. So in order to spice things up, I will used various addons to freshen up the experience.
When I first got back into DOOM, I played through Doom and Doom II completely vanilla. Fell in love with it again. Then I discovered user generated content and had my mind blown.
I replayed the IWADs...only this time I used lights.pk3, sbrightmaps.wad, PSXMUSIC.wad, psxsounds.wad, and smoothdoom. HO-LEE SHIT, CAN IT BE?! Has a staple game from my childhood been made relevant again? For me, the answer was a resounding YES.
So how often do you go back and liberate phobos, deimos, hell, and earth again? If you do, how do you spruce the place up a bit?

I would say that the original Doom is my favorite. I replay them in a similar fashion to your way but just with brightmaps, PSX music/sfx.

As someone who's waaaayy too into the old Dooms, I've beaten the campaigns both vanilla and modded several times. Hell, I replayed Doom2 in multiplayer survival with a few others using Brutal Doom and really enjoyed myself. It is the most overrated mod of all time, but that doesn't mean it's bad.

There are times where I think of some really outlandish and experimental ideas for maps, that are sometimes too far removed from the essence of Doom. It's always good to play a little more of the original IWADs because the whole birth of the Doom community happened through our own individual experiences playing these same exact levels.
It's always been useful for me to refer to the original IWADs for mapping inspiration. There's so much diversity in those maps alone, with examples of both good and bad mapping decisions. I've always had a good experience identifying these decisions and addressing the challenge of turning the bad examples into good examples, and the good examples into better examples.
To answer your question more directly, in a weird way, playing it with the original vanilla limitations in pixelated 320x240 resolution really makes me feel like the game is new again.
