By far one of the most annoying things about Doom modding is the lack of helpful content in regards to how things like ACS and Doom coding in general works. Yes I know there is the zdoom wiki but that alone isn't always very helpful. There are lots of mapping tutorials but almost no coding tutorials at all. Is there any special reason for why there are so few coding tutorials?

This is true. I find the ZDoom wiki very unhelpful in this regard. There should be more examples on there, but I guess that is up to the generosity of the people who understand such things and who can take the time to add such examples. Generally you have to dissect things that have been done in mapsets that use such things as best you can.

Yes, it sure could be better. They are quick at implementing new stuff, but doing it without a tutorial or explanation is just poor execution, in my mind.
Meanwhile, I would recommend you to do the following: Use whatever search engine you are comfortable with and make a query regarding what you want to do, using good keywords such as "zdoom setuservariable" (the latter is the name of the function). Then scroll down to the forum posts. The most helpful ones are bound to be on the zdoom forum, but not always. The bottom line is that most likely, someone will have wondered what you are now wondering, and you will be able to learn from former discussions about the same subject.
Apart from directly asking questions on the zdoom forum, that is how I learned to do stuff. It is also helpful to open up other's modifications to see how they did things, as Glen said.
Of course, you could always start a topic here, and I'll try to help you out, if I have the time. I'm no expert, but I'm pretty good at figuring things out anyway.
